Tahini Swirl Banana Bread

Bananas, tahini, & whole wheat flour give this bread extra fiber, vitamins, & minerals!

 

Ingredients:

  • 3 very ripe medium bananas
  • 1/2 cup (150 ml) pure maple syrup or 1/2 cup (100 g) sugar
  • 1 Tbsp vanilla extract
  • 2 Tbsp olive oil
  • 2 eggs
  • 1 2/3 cup (200 g) whole wheat flour
  • 1 tsp cinnamon
  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • 1 tsp salt

 

For the Tahini Swirl:

  • 1/4 cup tahini
  • 2 Tbsp maple syrup
  • 1/2 tsp cinnamon

 

Directions:

  1. Preheat oven to 350°F & grease a loaf pan.
  2. In a large bowl, mash bananas. Then, mix in maple syrup, vanilla, & olive oil. Then, mix in eggs.
  3. Mix in flour, cinnamon, baking powder, baking soda, & salt until combined.
  4. Make the tahini swirl: in a small bowl, mix together tahini, maple syrup, & cinnamon.
  5. Pour half of the banana bread batter into loaf pan, then drop half of the tahini swirl by spoonfuls across the surface of the batter & swirl around. Then, pour the other half of the banana bread batter into the pan & drop the remaining tahini by spoonfuls across the surface & swirl around. Bake for 35-40 minutes until golden brown on top & enjoy!!
