Taco Salad

Taco Salad

A fun way to get in all the food groups!

Ingredients:

  • 1 lb ground beef
  • 1/4 cup taco seasoning
  • 1 cup water
  • 1 head Romaine lettuce, chopped 
  • 1/3 cup scallions, chopped
  • 1 can of corn
  • 1 red onion, chopped
  • 1 cup grape tomatoes, sliced
  • Desired amount of cheese
  • Desired amount of tortilla chips
  • Juice from 1 lime
  • Salsa (optional)

 

Directions:

  1. In a large skillet on medium heat, cook beef until fully browned & no pink color remains (about 10-15 minutes). 
  2. Turn heat to medium low, mix in taco seasoning & water, then cook for 3-5 minutes until a thick sauce forms. Then, remove from the heat & set aside.
  3. In a large bowl, toss together lettuce & scallions. Then, top with corn, red onions, tomatoes, taco meat, cheese, & tortilla chips.
  4. Sprinkle everything with lime juice & salsa & enjoy!!
