A fun way to get in all the food groups!
Ingredients:
- 1 lb ground beef
- 1/4 cup taco seasoning
- 1 cup water
- 1 head Romaine lettuce, chopped
- 1/3 cup scallions, chopped
- 1 can of corn
- 1 red onion, chopped
- 1 cup grape tomatoes, sliced
- Desired amount of cheese
- Desired amount of tortilla chips
- Juice from 1 lime
- Salsa (optional)
Directions:
- In a large skillet on medium heat, cook beef until fully browned & no pink color remains (about 10-15 minutes).
- Turn heat to medium low, mix in taco seasoning & water, then cook for 3-5 minutes until a thick sauce forms. Then, remove from the heat & set aside.
- In a large bowl, toss together lettuce & scallions. Then, top with corn, red onions, tomatoes, taco meat, cheese, & tortilla chips.
- Sprinkle everything with lime juice & salsa & enjoy!!
