Sweet Potato Alfredo Pasta

The vegetable that can do it all!

Ingredients:

  • 1 package pasta of choice
  • 1 cup sweet potato puree (or flesh from 1 large roasted sweet potato)
  • 2 cups cups milk or chicken stock
  • 2 cloves garlic
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2/3 cup grated parmesan cheese

 

Directions:

  1. Cook pasta according to package instructions.
  2. In a food processor or blender, blend sweet potato, milk, garlic, onion powder, salt, black pepper, & parmesan cheese until as smooth as possible.
  3. Heat the mixture in a saucepan on medium heat until the cheese has fully melted & mixture is smooth. Add more milk to achieve desired consistency.
  4. Mix together pasta & sauce, top with more parmesan & herbs (I used thyme), then enjoy!!
