The vegetable that can do it all!
Ingredients:
- 1 package pasta of choice
- 1 cup sweet potato puree (or flesh from 1 large roasted sweet potato)
- 2 cups cups milk or chicken stock
- 2 cloves garlic
- 1 tsp onion powder
- 1 tsp salt
- 1/2 tsp black pepper
- 2/3 cup grated parmesan cheese
Directions:
- Cook pasta according to package instructions.
- In a food processor or blender, blend sweet potato, milk, garlic, onion powder, salt, black pepper, & parmesan cheese until as smooth as possible.
- Heat the mixture in a saucepan on medium heat until the cheese has fully melted & mixture is smooth. Add more milk to achieve desired consistency.
- Mix together pasta & sauce, top with more parmesan & herbs (I used thyme), then enjoy!!
