Cooking tomatoes/tomato products actually increases their antioxidant content!
Ingredients:
- 1 box pasta
- (1) 8-oz jar sun-dried tomatoes
- 3 Tbsp tomato paste
- 1/2 an onion, cut into chunks
- 2 garlic cloves
- 2 Tbsp fresh basil
- 3 Tbsp milk
- 1 tsp salt, plus more for topping
- 1 1/2-2 cups reserved pasta water
- Fresh mozzarella cheese, cut in chunks
- Dried Oregano
- Red pepper flakes
- Honey
Directions:
- Cook pasta according to package instructions, reserving about 2 cups of cooked pasta water.
- In a blender or food processor, blend together sun-dried tomatoes, tomato paste, onion, garlic, basil, milk, salt, & pasta water until smooth.
- Then, pour mixture into a saucepan & simmer for 5-10 minutes, adding more water to reach desired consistency if needed.
- In a large bowl, mix together sauce & pasta. Then, mix in chunks of mozzarella. Top with more mozzarella chunks, dried oregano, red pepper flakes, drizzle of honey, & sea salt, then enjoy!!
