Whole wheat flour adds extra fiber, vitamins, and minerals!
Ingredients:
- Juice from 1 lemon
- 1 1/3 cups (400 g) maple syrup
- 1 Tbsp vanilla extract
- 2 eggs
- 3 cups (360 g) whole wheat flour or 460 g oat flour (+ add 1 cup water to liquid ingredients)
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp salt
- 2 bags (32 oz) frozen strawberries
For the Pistachio Crumble:
- 1/2 cup shelled pistachios, chopped
- 2 Tbsp coconut sugar
- 1/2 tsp salt
Directions:
- Preheat the oven to 450°F and line a muffin pan with paper muffin cups.
- In a large bowl, combine lemon juice, maple syrup, vanilla extract, and eggs.
- Then, mix in flour, baking powder, baking soda, and salt just until combined. (If using oat flour, mix in 1 cup of water after mixing the dry ingredients into the wet ingredients). Then, mix in frozen strawberries.
- To make the pistachio crumble: in a small bowl, mix together pistachios, sugar, and salt). Set aside.
- Fill each muffin well to the top with batter. Top each muffin with desired amount of pistachio crumble.
- Bake the muffins for 5 minutes at 450°F, then turn the oven to 350°F and bake for 15 more minutes or until golden brown on top. Then, remove from the oven and enjoy!!
