Strawberry Pistachio Muffins

Whole wheat flour adds extra fiber, vitamins, and minerals!

 

Ingredients:

  • Juice from 1 lemon
  • 1 1/3 cups (400 g) maple syrup
  • 1 Tbsp vanilla extract
  • 2 eggs
  • 3 cups (360 g) whole wheat flour or 460 g oat flour (+ add 1 cup water to liquid ingredients)
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 2 bags (32 oz) frozen strawberries

 

For the Pistachio Crumble:

  • 1/2 cup shelled pistachios, chopped
  • 2 Tbsp coconut sugar
  • 1/2 tsp salt

 

Directions:

  1. Preheat the oven to 450°F and line a muffin pan with paper muffin cups. 
  2. In a large bowl, combine lemon juice, maple syrup, vanilla extract, and eggs.
  3. Then, mix in flour, baking powder, baking soda, and salt just until combined. (If using oat flour, mix in 1 cup of water after mixing the dry ingredients into the wet ingredients). Then, mix in frozen strawberries.
  4. To make the pistachio crumble: in a small bowl, mix together pistachios, sugar, and salt). Set aside.
  5. Fill each muffin well to the top with batter. Top each muffin with desired amount of pistachio crumble.
  6. Bake the muffins for 5 minutes at 450°F, then turn the oven to 350°F and bake for 15 more minutes or until golden brown on top. Then, remove from the oven and enjoy!!
