A healthy breakfast favorite!
Ingredients:
- 1 can chickpeas, drained & rinsed
- 1/2 cup (124 g) nut butter of choice
- 2 eggs
- 1/2 cup (150 mL) pure maple syrup or 1/2 cup (100 g) sugar
- 1/2 Tbsp vanilla extract
- 1/2 tsp cinnamon
- 1/2 tsp baking powder
- 1/2 tsp salt
- Chopped strawberries
Directions:
- Preheat oven to 350°F & butter a medium rectangular brownie pan.
- In a blender or food processor, blend chickpeas, nut butter, eggs, maple syrup, vanilla, cinnamon, baking powder, & salt for about 30 seconds.
- Then, mix in strawberries with a spoon & pour the batter into the pan.
- Bake for 30 minutes or until lightly browned, then enjoy!
