Eating a high-protein breakfast is a great way to start the day!
Ingredients:
- 1 cup (226 g) Greek yogurt
- ¾ cup water
- 2 Tbsp honey or sugar
- 1 Tbsp vanilla extract (optional)
- 1 egg
- 2 cups (240 g) all-purpose flour or 1 ½ cups (176 g) oat flour
- 2 ½ tsp baking powder
- ½ tsp salt
- Chocolate chips / blueberries / desired mix-ins
Directions:
- Place 2 tbsp butter or oil in a skillet set to medium heat on stove & allow to warm up for 5 mins.
- In a large bowl, whisk together Greek yogurt, water, honey/sugar, vanilla extract, & egg until evenly combined.
- Gently mix in flour, baking powder, & salt just until combined.
- Gently fold in desired mix-ins. (These pancakes get extra height if you let the batter rest for 10 mins before cooking).
- Place a scoop of batter onto skillet, cook for 1-2 mins until bubbles appear on surface, then flip & cook other side (without pressing down on pancake) for 2 mins or until browned & firm. Repeat with all of the batter, then top w/ favorite toppings & enjoy!!
