Pesto Corn and Avocado Salad

Pesto Corn and Avocado Salad

An easy, sweet and savory Summer side dish! 

 

Ingredients:

  • 5 ears of sweet corn, steamed for 3 mins
  • 1/2 sweet onion, chopped
  • 1/3 cup pesto (store-bought or recipe below)
  • 1 avocado, diced
  • 1 large tomato, chopped
  • Black pepper

 

Pesto: Blend together 6 cups fresh basil, 2 garlic cloves, 1/2 cup roasted cashews, 1 tsp salt, and 3-4 Tbsp olive oil until smooth. 

 

Directions:

  1. Slice the kernels off the corn cob into a large serving bowl.
  2. Add onions and pesto and mix everything together until evenly combined.
  3. Mix in avocado and tomato and gently toss to evenly combine. 
  4. Top with black pepper, more pesto, avocados, tomatoes, and enjoy!
