An easy, sweet and savory Summer side dish!
Ingredients:
- 5 ears of sweet corn, steamed for 3 mins
- 1/2 sweet onion, chopped
- 1/3 cup pesto (store-bought or recipe below)
- 1 avocado, diced
- 1 large tomato, chopped
- Black pepper
Pesto: Blend together 6 cups fresh basil, 2 garlic cloves, 1/2 cup roasted cashews, 1 tsp salt, and 3-4 Tbsp olive oil until smooth.
Directions:
- Slice the kernels off the corn cob into a large serving bowl.
- Add onions and pesto and mix everything together until evenly combined.
- Mix in avocado and tomato and gently toss to evenly combine.
- Top with black pepper, more pesto, avocados, tomatoes, and enjoy!
