Naturally sweetened with dates!
Ingredients:
- 2 cups (300 g) dates
- 3/4 cup water or milk
- 2 tsp vanilla extract
- 1 egg
- 1/2 cup extra virgin olive oil
- 1 1/4 cups cocoa powder
- 1/2 tsp baking powder
- 3/4 tsp salt, plus more for sprinkling on top
- Chocolate chips
Directions:
1. Preheat oven to 350°F & lightly grease a loaf pan (I use a 5"x 7" dish).
2. In a blender or food processor, blend dates with water/milk (works even better if the water is warm) until as smooth as possible. Then, add vanilla & egg & mix until combined.
3. Blend in the olive oil in a slow stream until incorporated.
4. Blend in cocoa powder, baking powder, & salt. Then, fold in chocolate chips with a spoon.
5. Pour mixture into baking dish, sprinkle with salt, bake for 15 minutes & enjoy!!
