Squash is very versatile & adds a pretty color to any dish!
Ingredients:
- 1 spaghetti squash, cut in half & seeds removed
- 1/4 cup olive oil
- 1 garlic clove, minced
- 3/4 cup pitted Kalamata olives
- 1/2 large cucumber, cut into chunks
- 1 large tomato, cut into chunks
- 1 tsp dried oregano
- 1 tsp salt
- 1 block feta cheese
- 3 Tbsp fresh parsley
Directions:
- Preheat oven to 400°F. Place each spaghetti squash half flesh-side up on a baking sheet. Roast for 1 hour or until a fork easily pierces the squash all the way to the bottom.
- Meanwhile, in a medium-sized bowl, mix olive oil, garlic, olives, cucumber, tomatoes, dried oregano, & salt.
- Once the spaghetti squash is done cooking, remove from oven & let cool for 8-10 minutes. Then, use a fork to make strands & place the strands in a large serving bowl.
- Pour the olive oil & veggie mixture over the squash strands & mix until evenly coated. Top with feta & parsley & enjoy!
