Ingredients:
Lemon Poppy Seed Cake:
- 3/4 cup (255 ml) honey
- Juice & zest from 1 lemon
- 1/2 cup (113 g) Greek yogurt
- 2 tsp vanilla extract
- 1/4 cup water
- 2 eggs
- 2 cups AP flour
- 1 Tbsp poppy seeds
- 2 tsp baking powder
- 1 tsp salt
Lemon Glaze:
- 3 Tbsp honey
- Juice from 1 lemon
Directions:
- Preheat oven to 350°F & grease a loaf pan.
- In a large bowl, mix together honey, lemon juice, lemon zest, Greek yogurt, vanilla extract, & water. Then, mix in eggs.
- Mix in flour, poppy seeds, baking powder, & salt.
- Pour mixture into loaf pan & bake for 20-25 minutes until golden brown on top.
- Meanwhile, make Lemon Glaze: mix together honey & lemon juice. Pour glaze over baked cake & enjoy!!
