Lemon Blueberry Zucchini Bread

 The most versatile summer vegetable that is packed with nutrients!

 

Ingredients:

  • 2/3 cup Greek yogurt
  • 3/4 cup sugar or coconut sugar
  • Juice & zest from 1 lemon
  • 2 eggs
  • 2 cups AP flour or whole wheat flour
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 1/2 cups freshly grated zucchini
  • 1 cup blueberries

 

Directions:

  1. Preheat oven to 350°F & grease a loaf pan.
  2. In a large bowl, mix together Greek yogurt, sugar, lemon juice & zest. Then, mix in eggs.
  3. Mix in flour, baking powder, & salt.
  4. Gently fold in zucchini, then blueberries just until incorporated.
  5. Pour mixture into load pan, bake for 35-40 minutes until golden brown on top & enjoy!!
