The most versatile summer vegetable that is packed with nutrients!
Ingredients:
- 2/3 cup Greek yogurt
- 3/4 cup sugar or coconut sugar
- Juice & zest from 1 lemon
- 2 eggs
- 2 cups AP flour or whole wheat flour
- 2 tsp baking powder
- 1 tsp salt
- 1 1/2 cups freshly grated zucchini
- 1 cup blueberries
Directions:
- Preheat oven to 350°F & grease a loaf pan.
- In a large bowl, mix together Greek yogurt, sugar, lemon juice & zest. Then, mix in eggs.
- Mix in flour, baking powder, & salt.
- Gently fold in zucchini, then blueberries just until incorporated.
- Pour mixture into load pan, bake for 35-40 minutes until golden brown on top & enjoy!!
