Tastes like Spring!
Ingredients:
- 2 Tbsp olive oil
- 1 small red onion, diced
- 2 garlic cloves, minced
- 1 cup Arborio Rice (or any rice)
- 3 Tbsp cooking wine
- 2 cups chicken stock or water
- 2 cups fresh basil
- 2 Tbsp lemon juice
- 1 tsp salt
- 1/2 cup grated parmesan cheese
Directions:
- In a skillet on medium heat, sauté onions & garlic in olive oil until tender (about 3 minutes in an already hot skillet).
- Stir in Arborio Rice & cook for 2-3 minutes to toast it, stirring occasionally.
- Mix in cooking wine. Once it has been absorbed, stir in 1 cup of chicken stock & let simmer until almost fully absorbed. Then, stir in another 1 cup of chicken stock & let simmer. Once the stock has been absorbed, taste the rice to see if it is al dente. If it is still slightly hard, add chicken stock 1/2 cup at a time until al dente. Then, remove the skillet from the heat.
- Meanwhile, in a blender or food processor, blend basil, lemon juice, & salt until as smooth as possible. Then, mix the basil mixture and parmesan cheese into the rice & enjoy!
