Lasagna Soup

A hearty, one-pot dish packed with tomatoes, noodles, meat, and cheese!

 

Ingredients:

  • 1.5 lb ground beef, chicken, or turkey
  • 1 onion, diced
  • 3 cloves garlic, minced 
  • 1 can (15 oz) tomato sauce
  • 1 can (12 oz) crushed tomatoes 
  • 4 cups chicken stock
  • 1/2-1 cup water
  • 1 tsp dried Basil
  • 1 tsp dried oregano
  • 1 tsp dried Rosemary
  • 1 tsp dried thyme
  • 1/2 tsp red pepper flakes
  • Salt to taste (about 1-1 1/2 tsp)
  • 1/2 tsp black pepper
  • 10-12 Lasagna noodles
  • 1 cup grated Pecorino Romano
  • 1 cup grated Mozzarella

 

Directions:

  1. In a large pot (5-7qts) on medium-high heat, cook ground meat with onions until all pink is gone.
  2. Then, mix in garlic and sauté for about 2-3 mins.
  3. Next, mix in tomato sauce, crushed tomatoes, chicken stock, water, dried basil, oregano, rosemary, thyme, red pepper flakes, salt, and pepper. 
  4. Add lasagna noodles. Then, turn the heat to medium-low and let everything simmer in the pot with the lid on for 30 mins to 1 hour, stirring and scraping the bottom of the pan occasionally.
  5. Before serving, mix in Pecorino Romano and Mozzarella, stir until melted, and enjoy!
