Sweet potatoes add fiber, vitamin A, and potassium!
Ingredients:
- 1 cup pureed sweet potato or flesh from 1 large roasted sweet potato
- 2/3 cup (200 g) maple syrup or honey
- 2 Tbsp olive oil
- 1 Tbsp vanilla extract
- 1/2 tsp almond extract
- 2 eggs
- 1 1/4 cups (150 g) whole wheat flour
- 2 tsp baking powder
- 1 tsp salt
For the cream cheese swirl:
- 4 oz (half of 1 block) cream cheese
- 2 Tbsp maple syrup
- 1 tsp vanilla extract
Directions:
- Preheat oven to 350°F and grease a loaf pan.
- In a blender or food processor, blend sweet potato flesh, maple syrup, olive oil, vanilla extract, almond extract, and eggs until smooth. Next, blend in whole wheat flour, baking powder, and salt until combined.
- Meanwhile, make the cream cheese swirl: in a separate bowl, beat together cream cheese, maple syrup, and vanilla until smooth.
- Pour the batter into the loaf pan. Then, pour the cream cheese mixture on top and swirl it into the batter. Bake for 25-30 minutes or until golden brown on top. Then, enjoy!
