Portable breakfast made with 5 simple ingredients!
Ingredients:
- 2 cups (160 g) rolled oats
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 2 ripe bananas
- 1/2 cup (~164 g) strawberry jam, plus more for topping
Fun mix-Ins:
- 1 oz freeze-dried strawberries (blended with ingredients for added strawberry flavor)
- Desired amount of chocolate chips (mixed into batter)
- 1/2 cup peanut butter (swirled into batter)
Directions:
1. Preheat oven to 350°F & fill a muffin pan with muffin wrappers.
2. In a food processor or blender, blend together rolled oats, baking powder, & salt until oats are as fine/powdery as possible.
3. Blend in bananas & strawberry jam until smooth. Then, fold in any mix-ins with a spoon.
4. Fill each muffin wrapper almost to the top with batter. Then, bake for 13-15 mins, or until lightly browned on top & domed.
5. Top with more strawberry jam & enjoy!!
