Greek yogurt makes this pasta creamy, light, & higher in protein!
Ingredients:
- 1 box pasta of choice
- 1 small red onion, finely chopped
- 1 garlic clove, minced
- 2 cups Greek yogurt
- 1 cup chicken stock or reserved pasta water
- 1 cup freshly grated parmesan cheese, plus more for topping
- 1 tsp salt
- Black pepper
- Dried Oregano
Directions:
- Cook pasta according to package instructions, reserving 2 cups of the pasta water for later.
- In a saucepan or deep skillet on medium-high heat, sauté onions & garlic until tender (about 3-4 minutes if the pan is already hot when they’re added).
- Then, turn the heat to medium & mix in Greek yogurt. Gradually whisk in chicken stock/pasta water until the mixture is evenly combined.
- Once the mixture is bubbling again, whisk in parmesan cheese 1/2 cup at a time until melted. Then, mix in salt.
- If needed, add more pasta water to thin out the sauce to the desired consistency or blend to reach the desired smoothness.
- Mix the sauce into the pasta, top with more cheese, black pepper, dried oregano, & enjoy!!
