Graham Crackers

Topped with cinnamon & brown sugar goodness! 

 

Ingredients:

  • 8 Tbsp butter, softened
  • 1/4 cup (60 g) dark brown sugar 
  • 1/3 cup (75 g) white sugar 
  • 1 egg
  • 2 Tbsp honey
  • 1 Tbsp vanilla extract 
  • 1 cup (156 g) whole wheat flour 
  • 1 1/4 cups (150 g) AP flour 
  • 1 tsp (3 g) cinnamon 
  • 1 tsp baking powder
  • 1 tsp salt

Egg wash:

  • 1 egg, lightly beaten 

Cinnamon Sugar Topping:

  • 1 Tbsp dark brown sugar
  • 1/2 Tbsp cinnamon 
  • 1/4 tsp salt 

Directions:

  1. In the bowl of a stand mixer, cream together butter, dark brown sugar, & white sugar for 3 minutes on medium-high speed. 
  2. Next, mix in egg until incorporated (you may need to use a silicone spatula to scrape down the sides of the bowl to ensure even incorporation of ingredients). 
  3. Then, mix in honey, & vanilla extract. 
  4. In a separate bowl, whisk together whole wheat flour, AP flour, cinnamon, baking powder, & salt. 
  5. Mix half of the flour mixture into the butter/sugar mixture in the stand mixer, then add the next half & mix until just incorporated. 
  6. Divide the dough in half, shape each half into a disk, wrap each disk in plastic wrap, & refrigerate for at least 2 hours (or overnight). 
  7. Meanwhile, make the Cinnamon Sugar Topping: in a small bowl, mix together dark brown sugar, cinnamon, & salt.
  8. After resting the dough, take it out of the fridge & preheat oven to 350°F. 
  9. Place a sheet of parchment paper down on a work surface. 
  10. Place one of the dough disks on top of the parchment paper, dust the top with flour, & roll out to 1/8”-thick. 
  11. Using a pizza cutter, cut the dough horizontally & vertically into a rectangle of desired size for graham crackers. Trim the uneven edges & bake these separately since they will bake in much less time (bake until lightly browned, about 5-7 mins). 
  12. Using a fork, puncture each graham cracker 3 times down its length. 
  13. Brush the entire sheet of dough with egg wash & sprinkle the cinnamon/sugar mixture on top. 
  14. Then, transfer the parchment paper with the graham cracker dough on it to a baking sheet & bake until lightly browned on top (about 12-15 minutes). 
  15. Repeat steps 9-13 for the second disk, then enjoy!!
