The happiest days begin with chocolate!
Ingredients:
- 1 cup (350 g) maple syrup
- 1/2 cup olive oil
- 2 eggs
- 1 3/4 cups (210 g) whole wheat flour
- 1/2 cup (50 g) cocoa powder
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp salt
- Desired amount of chocolate chips
- 1 cup water
Oat Crumble:
- 1/2 cup rolled oats
- 2 Tbsp cocoa powder
- 1/4 tsp cinnamon
- 1/2 tsp salt
- 2 Tbsp maple syrup
- 2 Tbsp olive oil
Directions:
- Preheat oven to 450°F & line a muffin pan with paper muffin cups.
- In a large bowl, combine maple syrup, olive oil, and eggs. Then, mix in flour, cocoa powder, baking powder, baking soda, salt, & chocolate chips just until combined. Then, mix in water and let the batter sit for 5 minutes.
- Meanwhile, make the oat crumble: in a small bowl, combine oats, cocoa powder, cinnamon, and salt. Then, fully mix in maple syrup and olive oil.
- Fill each muffin well to the top with batter. Top with desired amount of oat crumble.
- Bake the muffins for 5 minutes at 450°F, then turn the oven to 350°F and bake for 15 more minutes or until golden brown on top. Then, remove from the oven and enjoy!!
