Chocolate Olive Oil Muffins with Oat Crumble

The happiest days begin with chocolate!

 

Ingredients:

  • 1 cup (350 g) maple syrup
  • 1/2 cup olive oil
  • 2 eggs
  • 1 3/4 cups (210 g) whole wheat flour 
  • 1/2 cup (50 g) cocoa powder
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp salt
  • Desired amount of chocolate chips
  • 1 cup water

 

Oat Crumble:

  • 1/2 cup rolled oats
  • 2 Tbsp cocoa powder
  • 1/4 tsp cinnamon
  • 1/2 tsp salt
  • 2 Tbsp maple syrup
  • 2 Tbsp olive oil

 

Directions:

  1. Preheat oven to 450°F & line a muffin pan with paper muffin cups. 
  2. In a large bowl, combine maple syrup, olive oil, and eggs. Then, mix in flour, cocoa powder, baking powder, baking soda, salt, & chocolate chips just until combined. Then, mix in water and let the batter sit for 5 minutes.
  3. Meanwhile, make the oat crumble: in a small bowl, combine oats, cocoa powder, cinnamon, and salt. Then, fully mix in maple syrup and olive oil. 
  4. Fill each muffin well to the top with batter. Top with desired amount of oat crumble.
  5. Bake the muffins for 5 minutes at 450°F, then turn the oven to 350°F and bake for 15 more minutes or until golden brown on top. Then, remove from the oven and enjoy!!
