Dates add fiber, micronutrients, and natural sweetness to these chocolatey brownies!
Ingredients:
- ~ 2 cups (240 g) dates
- 2 cups water
- 2 cups (200 g) cocoa powder
- 1 tsp salt
- 2 eggs
- Desired amount of chocolate chips
Directions:
- Preheat the oven to 350°F and grease a 8” x 8” square brownie pan with butter and cocoa powder or line with parchment paper.
- Place dates in a heat-safe bowl.
- Boil water, then pour over dates and let soak for 15-20 minutes.
- In a blender or food processor, blend soaked dates and water until smooth.
- Add cocoa powder and salt to the blender and blend until smooth.
- Blend in eggs just until combined.
- Mix in chocolate chips with a spoon, then pour batter into brownie pan.
- Bake for 17-20 minutes or until firm and risen, then enjoy!
