A great way to make your immune system happy!
Ingredients:
- 1 lb Brussels sprouts
- Extra virgin olive oil for drizzling
- Desired amount of salt & black pepper
- Juice & zest from 1 lemon
- 2 Tbsp fresh thyme leaves (optional)
- 2 Tbsp fresh parsley (optional)
- 1/4-1/2 cup Parmesan cheese
Directions:
- Preheat oven to 400°F & line a baking sheet with parchment paper.
- Slice Brussels sprouts in half, then toss with a drizzle of olive oil & desired amounts of salt & pepper. Spread out in an even layer on the baking sheet. (For the crispiest sprouts, place each Brussels sprout cut-side down on baking sheet (picture below). The farther apart they're spaced, the crispier they'll be). Bake for 20-25 mins until browned & crispy.
- In a small bowl, mix together lemon juice & zest, thyme, parsley, and Parmesan. Toss with Brussels sprouts until they’re evenly coated & enjoy!!
