Spreading out the sweet potatoes on the baking sheet, tossing them mid-way through, & baking at 400°F help to make these baked fries extra crispy!
Ingredients:
- 3 large sweet potatoes
- 2 tbsp olive oil
- 1 tsp salt
- 1 Tbsp fresh thyme
- Black pepper
Directions:
- Preheat oven to 400°F & line two baking sheets with parchment paper.
- Cut the sweet potatoes into fry-shaped pieces (about 1/4” thick).
- Divide the fries evenly between the two baking sheets.
- Drizzle olive oil over the fries, then sprinkle them with salt, thyme, & black pepper. Then, toss the fries to evenly coat them.
- Spread out the fries in an even layer on the baking sheets, making sure none overlap so they can get crispy.
- Bake the fries on the center oven rack for 20 minutes, then toss them around with a spatula & rearrange them into an even, spread out layer. Bake for another 12-15 minutes or until browned & crispy. Then, enjoy! (If both sheets do not fit on the same rack, bake one sheet on the top rack & one on the bottom rack for 15 mins. Then, toss the sweet potatoes around with a spatula & switch the two baking sheets on the racks so the one baked on the top rack is now on the bottom & the one baked on the bottom rack is now on the top. Finish baking for 15 more minutes until crispy).
