Light, fluffy, & Elvis's favorite.
Ingredients:
For the cake:
- 1 stick butter, softened
- 1 cup (200 g) coconut sugar or white sugar or 2/3 cup (224 g) honey
- 1 Tbsp vanilla extract
- 2 eggs
- 3 overripe bananas, mashed
- 1/2 cup Greek yogurt
- 2 2/3 cup (319 g) AP flour
- 1 Tbsp baking powder
- 1 1/2 tsp cinnamon
- 1 1/2 tsp salt
- 1 cup mini chocolate chips
- 1 cup water
For the frosting:
- 1 cup (256 g) peanut butter
- 1/2 cup Greek yogurt
- 1/2 cup (170 g) honey
Directions:
- Preheat oven to 350°F & grease two 8” cake pans.
- In a large bowl, cream together butter & coconut sugar until fully combined (about 1-2 mins).
- Stir in vanilla extract & eggs & beat mixture for 2 minutes (medium speed with electric mixer).
- Mix in mashed bananas & Greek yogurt until combined.
- In a separate bowl, whisk together flour, baking powder, cinnamon, salt, & chocolate chips.
- Mix half of the dry ingredients into the banana mixture, followed by the water, then the remaining dry ingredients just until combined.
- Pour half of the mixture into each cake pan, bake for 25-28 minutes or until risen, lightly browned, & the sides are just starting to pull away from the pan.
- Make the frosting: in a large bowl, mix together peanut butter, yogurt, & honey until evenly combined. Spread the mixture in between the cake layers & on top, then enjoy!!
