Cauliflower adds fiber, vitamins, and antioxidants to this creamy pasta!
Ingredients:
- 1 box fettuccine
- 3 cups cauliflower florets
- 1 cup milk
- 2 garlic cloves
- 3 Tbsp butter or olive oil
- 1/2-3/4 cup reserved pasta water
- 1 1/4 cups Parmesan cheese
- 1 tsp salt
- 1/2 tsp black pepper
Directions:
- Cook fettuccine according to box instructions and reserve 1/2-3/4 cup of the cooked pasta water.
- Meanwhile, steam cauliflower for about 6 minutes, or until easily pierced through with a fork.
- Blend steamed cauliflower, milk, and garlic until as smooth as possible.
- Pour the blended cauliflower mixture into a saucepan and heat on stove on medium heat.
- Whisk in butter or olive oil and reserved pasta water until the sauce reaches your desired consistency—start with 1/2 cup water, then keep adding if desired.
- Whisk in Parmesan until fully melted, then whisk in salt and pepper. Pour pour over pasta & enjoy!
