An easy, high-protein summer dish!
Ingredients:
- 1 cup whole milk Greek yogurt
- 3/4 cup buffalo sauce
- 1/2 onion, diced
- 2 cloves garlic, minced
- 1 Tbsp onion powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 4-5 chicken breasts, cooked & shredded (or 3-4 cups shredded chicken)
- 1 can chickpeas, rinsed and drained
- 1/2 cup chopped scallions plus more for topping
- 1/2 cup chopped parsley
- Desired amount of blue cheese (optional)
Directions:
- In a large bowl, mix together Greek yogurt, buffalo sauce, onion, garlic, onion powder, salt, and pepper until fully combined.
- Then, mix in shredded chicken, chickpeas, scallions, and parsley until everything is evenly coated. Fold in blue cheese crumbles and top with more scallions, a drizzle of honey and buffalo sauce, and flaked sea salt, then enjoy!
