Buffalo Chicken Salad

An easy, high-protein summer dish!

 

Ingredients:

  • 1 cup whole milk Greek yogurt
  • 3/4 cup buffalo sauce
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 1 Tbsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 4-5 chicken breasts, cooked & shredded (or 3-4 cups shredded chicken)
  • 1 can chickpeas, rinsed and drained
  • 1/2 cup chopped scallions plus more for topping 
  • 1/2 cup chopped parsley
  • Desired amount of blue cheese (optional)

 

Directions:

  1. In a large bowl, mix together Greek yogurt, buffalo sauce, onion, garlic, onion powder, salt, and pepper until fully combined. 
  2. Then, mix in shredded chicken, chickpeas, scallions, and parsley until everything is evenly coated. Fold in blue cheese crumbles and top with more scallions, a drizzle of honey and buffalo sauce, and flaked sea salt, then enjoy!
