Buffalo Chicken Meatballs

Everything tastes better on a stick


Ingredients:

  • 1/2 cup chopped scallions
  • 2 garlic cloves, minced 
  • 1 lb ground chicken
  • 1/2 cup buffalo sauce 
  • 1 tsp onion granules
  • 1 tsp salt
  • 1/2 tsp black pepper 
  • 1/2 cup bread crumbs
  • ⅓-½ cup blue cheese crumbles

Directions:

  1. Preheat oven to 400°F & line a baking sheet with parchment paper.
  2. In a large bowl, mix together scallions, garlic, ground chicken, buffalo sauce, onion granules, salt, black pepper, & bread crumbs until evenly combined. 
  3. Then, gently work in the blue cheese. 
  4. Scoop into balls about 2 inches in diameter, place about 1 inch apart on baking sheet, & bake for 25-30 minutes (until browned on top & fully cooked in the middle). Then enjoy!!
