Broccoli & Feta Salad with Honey Lemon Dressing

A crunchy side dish made with healthy seasonal favorites!

 

Ingredients:

  • 1 head of broccoli, washed & cut into florets
  • 1 jar capers
  • 1/2 cup chopped celery
  • 1/3 cup shredded or chopped carrots
  • 1/3 cup sun-dried tomatoes, chopped
  • 1/4 cup sunflower seeds
  • 1/2 cup crumbled feta
  • 1/4 cup chopped red onion

 

For the Dressing:

  • 2 Tbsp honey
  • Juice from 1 lemon
  • 2 Tbsp olive oil
  • 2 cloves garlic, minced
  • 1/2 tsp salt
  • 1/2 tsp black pepper

 

Directions:

  1. In a large bowl, toss together broccoli florets, capers, celery, carrots, sun-dried tomatoes, sunflower seeds, feta, & red onion.
  2. In a separate bowl or measuring cup, whisk together honey, lemon juice, olive oil, garlic, salt, & pepper.
  3. Pour dressing over veggies, toss to coat, & enjoy!
