A crunchy side dish made with healthy seasonal favorites!
Ingredients:
- 1 head of broccoli, washed & cut into florets
- 1 jar capers
- 1/2 cup chopped celery
- 1/3 cup shredded or chopped carrots
- 1/3 cup sun-dried tomatoes, chopped
- 1/4 cup sunflower seeds
- 1/2 cup crumbled feta
- 1/4 cup chopped red onion
For the Dressing:
- 2 Tbsp honey
- Juice from 1 lemon
- 2 Tbsp olive oil
- 2 cloves garlic, minced
- 1/2 tsp salt
- 1/2 tsp black pepper
Directions:
- In a large bowl, toss together broccoli florets, capers, celery, carrots, sun-dried tomatoes, sunflower seeds, feta, & red onion.
- In a separate bowl or measuring cup, whisk together honey, lemon juice, olive oil, garlic, salt, & pepper.
- Pour dressing over veggies, toss to coat, & enjoy!
