Blueberry Lemon Oat Bars

Soft, sweet, & full of antioxidants!

 

Ingredients:

  • 2 cups (160 g) rolled oats
  • 1/4 cup extra virgin olive oil
  • 1/2 cup (100 g) coconut sugar or white sugar
  • 1 tsp baking powder
  • ½ tsp cinnamon
  • 1/2 tsp salt
  • 1 egg
  • 1 tsp vanilla extract
  • 1/3 cup sliced almonds or chopped walnuts
  • Zest from 1 lemon
  • 1 1/2 cups frozen blueberries

 

Directions:

  1. Preheat the oven to 350°F & line the bottom of a small (~7”x11”) rectangular baking dish with parchment paper. 
  2. In a food processor or blender, blend rolled oats, olive oil, sugar, baking powder, cinnamon, salt, egg, & vanilla until as smooth as possible.
  3. Press the mixture into the bottom of the baking dish, reserving about 1/3 of the mixture for the topping.
  4. Spread the almonds, lemon zest, & blueberries across the top of the oat mixture.
  5. Using a spoon, drop spoonfuls of the reserved oat mixture across the top.
  6. Bake for 27-30 minutes, until golden brown on top.
  7. Remove from the oven & cool to room temperature. Then, cut into bars & enjoy!
