Almond flour, blueberries, and lemon add a variety of antioxidants to this healthy breakfast favorite!
Ingredients:
- 1/2 cup (100 g) sugar or coconut sugar
- Juice & zest from 1 large lemon
- 1 Tbsp vanilla extract
- 1 egg
- 2 cups (200 g) almond flour or 2 cups (240 g) AP flour
- 1 Tbsp baking powder
- 1 tsp salt
- 1 1/2 cups fresh or frozen blueberries
Directions:
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- In a large bowl, mix together sugar, lemon juice, lemon zest, vanilla, and egg until well combined.
- Then, mix in flour, baking powder, and salt. Gently fold in blueberries.
- Place 2 Tbsp-sized scoops about 2 inches apart on the baking sheet, bake for 10-12 minutes or until golden brown, then enjoy!!
