Blueberry Lemon Scones

Blueberry Lemon Scones

Almond flour, blueberries, and lemon add a variety of antioxidants to this healthy breakfast favorite!

 

Ingredients:

  • 1/2 cup (100 g) sugar or coconut sugar
  • Juice & zest from 1 large lemon
  • 1 Tbsp vanilla extract
  • 1 egg
  • 2 cups (200 g) almond flour or 2 cups (240 g) AP flour
  • 1 Tbsp baking powder
  • 1 tsp salt
  • 1 1/2 cups fresh or frozen blueberries

Directions:

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a large bowl, mix together sugar, lemon juice, lemon zest, vanilla, and egg until well combined.
  3. Then, mix in flour, baking powder, and salt. Gently fold in blueberries.
  4. Place 2 Tbsp-sized scoops about 2 inches apart on the baking sheet, bake for 10-12 minutes or until golden brown, then enjoy!!
