Blueberry Breakfast Quinoa

Nature's Cheery-Os!

Ingredients:

  • 1 cup uncooked quinoa
  • 2 cups milk
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • Dash of salt
  • Sliced or chopped almonds
  • Fresh or frozen blueberries
  • Coconut flakes (optional)
  • Drizzle of honey or maple syrup (optional)

 

Directions:

  1. In a saucepan, combine the quinoa, milk, cinnamon, vanilla, salt & bring the mixture to a boil. Once boiling, reduce the heat to medium low & simmer everything for 8-10 minutes. (It may start to foam up really high in the pot after reaching a boil, but once the temperature comes down this will stop). 
  2. Transfer quinoa to a serving bowl, mix in 1-3 Tbsp milk to reach desired consistency. Then, top with almonds, blueberries, & desired toppings. Drizzle with pure maple syrup or honey & enjoy!!
