Marinating kale in lemon juice makes it softer & tastier!
Ingredients:
- 1 large bunch of kale, torn into small pieces
- Juice from 1 lemon
- 3/4 cup basil pesto, divided
- 1/2 red onion, thinly sliced
- 1 peach, sliced
- 1 avocado, sliced
Pesto Recipe: Blend 4 cups fresh basil, 1/3-1/2 cup olive oil, 1/2 cup roasted cashews, 2 garlic cloves, & 3/4 tsp salt until smooth.
Directions
- In a large bowl, toss together torn kale leaves & lemon juice to evenly coat. Then, massage the kale for 3-5 minutes until slightly more tender (this makes the kale tastier & easier to digest).
- Toss the kale with 1/4 cup basil pesto until all pieces are evenly coated.
- Top kale with red onion, peach slices, & avocado. Then, distribute 1/2 cup basil pesto on top & enjoy!
