Avocado Sloppy Joes

Packed with protein, unsaturated fats, and antioxidants for heart and brain health!

 

Ingredients:

  • 2 Tbsp olive oil
  • 1/2 of an onion, chopped 
  • 2 garlic cloves, minced
  • 1 lb lean ground turkey
  • 2 avocados
  • 1/4 cup chopped fresh parsley
  • 1/2 cup chopped fresh basil
  • 2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1 tsp dried oregano
  • 1 tsp salt
  • Black pepper
  • Hamburger buns
  • Chopped scallions
  • Tomatoes

 

Directions: 

  1. In a large skillet over medium high heat, heat the olive oil until sizzling.
  2. Then, add onions and garlic and sauté until translucent, about 3-4 minutes.
  3. Then, add ground turkey, break it up in the pan and cook until fully opaque in color. Then, take off the heat and set aside.
  4. Meanwhile, in a blender or food processor, blend together avocado, parsley, basil, onion powder, garlic powder, oregano, salt, and black pepper until smooth.
  5. Mix the avocado mixture into the cooked ground turkey until everything is evenly combined. Then, serve on bread, top with scallions, tomato, cheese, and enjoy!
