Avocado Alfredo Pasta

Ingredients:

  • 1 box pasta 
  • 1 cup milk 
  • 1 ripe avocado
  • 1 1/2 cups grated Parmesan cheese
  • 2 cloves garlic
  • 1/2 sweet onion, chopped into chunks
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning (recipe below)
  • Fresh parsley, chopped

 

Italian Seasoning: Mix together:

  • 1 Tbsp dried basil
  • 1 Tbsp dried oregano
  • 1 Tbsp dried parsley
  • 1/2 tsp dried rosemary
  • 1/2 tsp dried thyme
  • 1/2 tsp red pepper flakes
  • 1 tsp garlic granules

 

Directions:

  1. Cook pasta according to package instructions, reserving 1 cup of cooked pasta liquid.
  2. In a blender or food processor, blend milk, avocado, parmesan, garlic, onion, salt, pepper, & Italian seasoning until smooth.
  3. Pour mixture into a large saucepan & cook on medium heat until bubbling, stirring frequently. Whisk in reserved pasta water ¼ cup at a time to achieve desired consistency.
  4. Mix together pasta & sauce in a large serving dish, top with parsley, more cheese, & enjoy :)
