Ingredients:
- 1 box pasta
- 1 cup milk
- 1 ripe avocado
- 1 1/2 cups grated Parmesan cheese
- 2 cloves garlic
- 1/2 sweet onion, chopped into chunks
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp Italian seasoning (recipe below)
- Fresh parsley, chopped
Italian Seasoning: Mix together:
- 1 Tbsp dried basil
- 1 Tbsp dried oregano
- 1 Tbsp dried parsley
- 1/2 tsp dried rosemary
- 1/2 tsp dried thyme
- 1/2 tsp red pepper flakes
- 1 tsp garlic granules
Directions:
- Cook pasta according to package instructions, reserving 1 cup of cooked pasta liquid.
- In a blender or food processor, blend milk, avocado, parmesan, garlic, onion, salt, pepper, & Italian seasoning until smooth.
- Pour mixture into a large saucepan & cook on medium heat until bubbling, stirring frequently. Whisk in reserved pasta water ¼ cup at a time to achieve desired consistency.
- Mix together pasta & sauce in a large serving dish, top with parsley, more cheese, & enjoy :)
