Arugula, Tomato, & Chickpea Salad

Hearty oat groats give this salad added fiber, protein, and iron!

 

Ingredients:

  • 1 cup oat groats
  • 3 cups water
  • 2 packed cups of arugula, washed & dried
  • 1 can diced tomatoes in basil, garlic, & oregano
  • (1) 3.5-oz jar of capers
  • 1 can chickpeas, rinsed & drained
  • 1 avocado, cubed

 

Directions:

  1. Bring oat groats & water to a boil on the stove. Then, turn the heat down & simmer for 25-30 minutes or until tender.
  2. In a large bowl, toss together cooked oat groats, arugula, tomatoes, capers, chickpeas, & avocado. Then, enjoy!
